Food plays a significant role during a particular festival. I love different cuisines; however, now I will talk about my favourite one.

It is Jaggery rice which is a traditional Punjabi sweet dish made with jaggery, rice and spices. There are some variations of jaggery rice in Indian cuisine and this recipe comes from Punjabi cuisine. A vegan and gluten-free rice dish that can be made for any festive occasion.

I love to eat this cuisine during the festival of harvesting on April 13 every year. My family likes it very much since it provides tranquillity and easy to digest.
- How it’s prepared
This jaggery rice is a favourite of everyone at home. The recipe is easy and quick to make and tastes too good. This recipe is especially loved by kids or people who have a sweet tooth. We have to take around 100 grams of jaggery. Then we have to soak it in around 3/4 cup of water for 30 to 45 minutes. If there are impurities, then filter the jaggery syrup using a fine mesh strainer and keep it aside.
Then, we have to pick, clean and wash ¾ cup rice a couple of times in water. Moreover, we have to soak the rice for 15 to 20 minutes in water. Later drain all the water and set the rice aside. Then, we have to boil both materials with spices like cardamom and other dry fruits.

Eating jaggery rice helps in blood purification, aids digestion, relieves joint pain, bolsters energy levels and boosts immunity. As evidenced by its mention in ancient books, jaggery has been a part of Indian cuisines for at least a millennium. It is used in both sweet and savoury dishes across India.
